Cooking is good, Cooking Guide/Hints for Beginniners By IZUMI
As the title says,
ok a hint, if you would like to cook in the chinese ways.
hint 1)
In 99% of the dishes, we will use ginger and possibly Garlic.
this is because Ginger has this ability to make meat less smelly
and Garlic gives it a smell of food.
But they do not go into the food directly, the have to be cooked/panned/fried first.
hint 2)
if you would like to add pork, chicken, beef or anything in the dish that you wish to make
you would 80% cook them before you make the dish.
let's say for example, making Sweet and Sour Pork.
You would cook the Pork, so it's cooked and not raw
then you make the sauce, then put the pork into it.
So it's cooked 'twice' and then it will be a definite that it's cooked.
*Usually the meat will change colour after cooked and make sure there's no BLOOD IN iT.
Blood = Raw
hint 3)
the cutting board? or w/e u call it, it's the wooden thing that you chop/cut things on.
make sure you clean it after you cut the vegetables, and raw meats.
not just that but the knives/dagger/sword/axe u use to cut up things
give it a quick rinse before you use it again in another items.
hint 4)
Long Sleeves or Dity CLothes, wear those clothes while you cook,
because the hot stuff will just jump to ur hairy arms if u dun wear protections!
it hurt me greatly =_=
hint 5)
it's kind of in link with hint 4.
Oil is not to make food taste nicer, well i dun think it's purpose is that for chinese dishes
it's actually making what you cook, not STICKY to the pan/fryer you use
if you just throw ur raw meat in the cooking pan/fryer, it can stain it and stick to it.
so add plenty of oil to 'LUBRICATE' ;p ur wok/pan/fryer, so it won't stick to it.
Surprisingly, the oil can be reused, so after you made a dish and there're stil plenty of oil
you can take them out and use them again in another dish.
hint 6)
Think about what your procedures are before you do it.
and think whether salt/sugar/etc are needed or not.
if they are, put them on the desk so you won't forget.
get a helper like ur lil sister (well i have one =] and she does the dish washings)
so you won't leave things out.
hint 7)
if meats are NOT defrosted, as in it still have ice or something on top
you can cook them still,,,,,, BUT they will get burnt much more faster.
for example if you are making beef steak, they have ice on them still.
and u throw it into the fry/pan, it turns black within a few minutes
but it's because of the water that it burns, not because it's done.
so get a knife and cut it open, and see if it's still red in the inside
to make sure it's done.
FINAL HINT)
make sure ur toilet is open
and u have Doctors nearby or have some medicine/tablets ready
you know, incase of failure in cooking it can lead to death or various injuries
COLD WATER recommended if burnt, or SOya Sauce.
Plasters not so good, make sure if you cut urself use some sort of 'DEtol'
if that's how u spell it,
GOOD LUCK and HAVE FUN
